Being from Louisiana, Zatarains root beer has always been a part of my life and now my grandson loves it as much as I do. I bought as much as I could when I realized it was being discontinued. I’ve been on a mission to find something that might come close. The search is ended! This extract is as close to Zatarains as you could get! The only difference is the color is more like tea than the dark color of Zatarains. I can live with that! I tried to find a recipe but wasn’t successful so here is what I did on my first attempt. You may have to adjust to your taste. It is super concentrated. You don’t want to use too much. I used 1/8 teaspoon root beer, 1 cup sugar to 1 quart of water. I did increase the root beer by a drop or two. If it tastes off, you have used too much.If you are looking for a replacement, you’ve found it!

We used this flavoring to make hard sugar candy. The flavoring is a very dark brown, to get the amber/orange coloring for our candy we added lots of yellow food coloring & a few drops of red! This tasted great & easily became a tasty addiction!

Very good taste. But it makes fewer bottles of root beer than some other brands I've tried. I do add more vanilla because Im a vanilla lover. It still tastes great without it. The flavor was compared to another brand, side by side & it won. But Im not sure I'd notice if they were not side by side.
