I was very excited about finding a great deal on this machine and how it would make making chocolates easier than using the microwave. 1st off, it does temper the chocolate easier than using the microwave process and my arm thanks the stirrer for that. 2nd of all, I don't think it has helped with making a mess any less than or the overall process of making chocolates easier as soon as you take the bowl out after reaching the correct temperature, you have to basically start over and reset the settings as if youre starting all over again. I'm surprised that it cannot remember that you are in the middle of making chocolates and keep the original settings from the beginning. its a very expensive chocolate temperer if that's the only thing it does, I dont think it is worth it for just that function. I wish it had better temperature management when pouring the chocolate into the molds (basically better logic) for my basic home making hobby.

Purchasing this machine has been an absolute nightmare. Previously ordered other cheaper tempering machines from the same company that have all broken because we pushed them too hard so we thought we'd by this one because it looks made for commercial use...However, it came dead on arrival.The bowl never reached the correct temperature and therefore did not rotate. I called Amazon support right away and they told me that this machine is not returnable and that I should contact the manufacturer. After reaching out to the manufacturer, they told me to reach out to Amazon. I've been stuck in a limbo and have not received any real support and realize now that I am stuck with a defective unit that will most likely be going into the trash. Absolutely terrible experience.

Wife and daughter tried it out and it appears to do a good job.Update: After annual candy-making sessions using this machine for 5 years, I can say that ours has been a quality item that has worked flawlessly providing both milk and dark chocolate for covering creams and cherries. We had been using a smaller tempering machine but we would have to make two batches of chocolate for every batch of candy. Following the instructions has worked well for us. The chocolate has never turned white. This year we used the "overnight" hold feature for the first time to keep the chocolate melted, mixed and ready for tempering when needed. We are not a commercial customer but usually share with friends and family.Our machine has proven to work perfectly as advertised with no functional issues. It has proven its worth to us repeatedly.

I'm new at making chocolate and after several bad and mixed results with tempering on a slab decided to try this machine. The first time I followed the directions exactly, I got perfectly tempered chocolate. The only reason I didn't give 5 stars is that I haven't worked with it long enough to used advanced options and custom recipes.
