Easy to use , just follow a recipe to make lunch meat or homemade sausage meat . Clicks together tight so you can cook the meat safely , refrigerate in the pot and slice and enjoy your homemade creations ! I like that you can control what goes into your food.

This has been fun to play with and I've managed a recipe for a decent Cajun chicken breast. I like having homemade cold cuts and knowing exactly what's in them. I found it difficult to find more than a couple of recipes, so it took some experimenting but ultimately I'm pleased with the outcome.I found the best way to prepare the chicken was as follows:1) Puree 2 1/2 to 3 pounds of boneless skinless chicken breast in a food processor. (Yucky mess but trust me)2) Add 2-3 tablespoons of Cajun spice mix (I used Club House brand) and salt to taste.3) Fit an 8" vacuum sealer bag into the cooker, it makes clean up a lot easier. Press the meat into the bag until the cooker is about 3/4 full. Fold the top of the bag over the meat and put the spring-loaded lid on the cooker.4) Chill the whole thing in the fridge overnight. This allows the enzymes to develop which will hold the meat together once it's cooked.5) I used a canning rack to keep the cooker from touching the bottom of my water pot (much like canning). Cook on a low boil until proper internal temperature is reached. The time will vary from 45 to 90 minutes depending on your amounts and the heat level.6) There may be a lot of liquid in the cooker when you're done. DO NOT dump it out! It will be reabsorbed into the meat so it isn't dry. Put the hot cooker into a bowl or basin of ice water to cool it quickly.7) Once it's cool enough, put the whole cooker back in the fridge to cool completely (I let it sit overnight).8) Remove the meat from the cooker, keeping the vacuum bag to store your cold cuts, slice and serve. I find it's 100% better with some sliced tomato.Good luck and enjoy!

This item worked very well. It was easy to use. I would suggest for improvement - There is a hole for the thermometer to be put through to check the temp of whatever meat you are cooking. This hole is open so water drips into the meat as it cooks due to the steam from the boiling water. There should be a silicone closure or something to try to prevent water from leaking in while cooking but still allows the thermometer to be inserted to check the temp.The Thermometer that was delivered with my item was in celcius only. It would have been nice if there was a Fahrenheit scale as well.To clean, we had to "Unscrew" the spring from the plate to get it clean. This was not a hard thing to do - but without doing that you will never get all of the previous meats cleaned for the next use.

This meat press is on the small side, but that makes it perfect for cooking small portions of deli meat. Easy to clean, easy to prep. I'm happy with this purchase.
