Make sure meat is not completely frozen but just barely

It a good slicer... To slice pork belly, I had to freeze the meat then put the serrated blade in to cut my slabs of bacon... You have to be careful not to put to much pressure in the slide as it can give you INCONSISTENCIES in your meat slices due to the flex in the slicing table. You need to take your time to get slices even, but it's not a $1000 machine, but a nice machine to get your homemade bacon to the table...

After doing a lot of online research and comparisons, I decided on this model. On the surface it's sturdy and well built, but on first use the flaws become quite evident. My first run was shaving a small fully cooked 3 lb roast beef into deli meat. It was slow roasted the night before, so it was still soft and moist but allowed to cool in the fridge for easier cutting.Firstly, the suction cup feet don't hold as well as they need to. The roast required me to push fairly hard against the backing plate due to it's uneven shape, and the unit started to wander very easily - to the point that my wife ended up holding it in place the whole time from the back.Secondly, the adjustment dial which is attached to the backing plate is quite wobbly, and there's no way to secure it. It's a basic lever that just moves the backing plate forward or back to adjust the thickness, but there's a lot of play in the slider which causes the backing plate to be able to twist sideways very easily. Not a lot of twist motion, but enough that when coupled with the flexing blade you can go from a 3mm slice to a 9mm slice from start to finish - as described below.Which brings us to the 3rd problem: between the twisting backing plate and the flexing blade, the thickness of the cuts started to vary wildly while cutting the harder roast. They would start thin, and by the time the roast forced it's way through the slices were triple thickness at the end. I could observed from looking down on the unit that both the blade and backing plate were moving while cutting, and there's no way to reinforce or tighten anything.Lastly, and this is minor but important, the 2 screws that attach the backing plate on to the adjuster slide are facing the food, not hidden behind the backing plate. This means that pieces of food can easily get dislodged in the screw heads and around the screws and require extra work to disassemble and clean. The backing plate should be 1 solid piece, with no fasteners in it's face.I'm also concerned with how easily the motor seemed to bog down while slicing, I bought this unit because it was touted as "powerful", and the specs support that claim. I expected it to plow right through this simple roast without skipping a beat, but it seemed to really struggle at times. Makes me wonder what kind of longevity I'm going to get out of this unit.Maybe this is just how all sub $300 meat slicers are flawed in various ways, I don't have any previous experience for comparison. Maybe slicing softer meats like hams and donair loafs will go much smoother. But for my first impression, I'm not impressed.
